The colder weather has us dreaming about nights in with good company and a delicious, warm meal. One of our favorite ways to stay cozy in the kitchen is by cooking 100% grassfed lamb!
From burgers to stuffed squash, ground lamb is as diverse as ground beef but with a much more hearty, earthy flavor.
In addition to managing 350 cattle, Herdsmen Derek and Rusbel also take care of about 50 St. Croix Kentahten sheep. Our sheep spend their entire lives grazing on our biodynamic pastures, and we often group our cattle and lamb together to protect our flock from predators. The biodiversity that the sheep offer is good for our soil, our grass, and our compost.
Lamb is high in iron, packed with good fats like Omega-3's, and loaded with protein. Just 3 oz of lamb contains 23g of protein! Lamb also tends to be lower in fat and calories than other types of meat.
