Tastes Like Real Beef
Grassfed beef tastes different from conventional beef raised on grain. At Foxhollow, we’re changing the cow’s diet back to what it should be: grass. Cattle are designed to eat grass and here they do it well, helping us create healthier pastures along the way.
The simplest way to describe the flavor of our 100% Grassfed Beef is that it has character. Our beef actually tastes like real beef, the beef that our parents and grandparents grew up eating. The flavor is earthy and rich, with subtle mineral notes. Grassfed beef is naturally lean, so the marbling you’re used to seeing in conventional beef is less prevalent, although grassfed fat content varies by cut and grind. Low and slow cooking is the key for buttery and tender grassfed beef.
Our 100% Grassfed Beef is meat you can trust. When you eat beef from Foxhollow Farm, you know that a package of ground beef comes from one happy cow. All Foxhollow Farm animals are processed locally at a USDA inspected facility. We are also a member of the American Grassfed Association, and you can read their membership standards on humane treatment.
The Herd
Our herd of approximately 550 cattle is filled with hybrid vigor that is a mix of mostly brown-hided cattle that are 2/3 Red Angus and 1/3 Jersey with a sprinkling of Corriente and Barzona cattle. Head herdsman, Derek Lawson, breeds cows particularly suited to the land and Kentucky's climate. As a result, every calf born into our herd is more suited to the environment than its parents were. Derek has developed a "closed herd" so that every steer and heifer is born on Foxhollow’s Biodynamic pastures, virtually eliminating the herd's exposure to outside pathogens and creating the healthiest herd possible.
This commitment to the health of our herd leads us to raise cattle differently than conventional farms because:
- We don’t rush our cattle to maturity with growth hormones.
- We don’t fatten them with grain that their bodies can’t digest.
- We don’t fill healthy animals with antibiotics, because healthy cows in fresh air and open pasture don’t need them.
In the rare instance that one of our animals does become ill, the comfort and health of that animal always comes first. We begin with homeopathic remedies and only use antibiotics as a last resort.
The Land
Foxhollow Farm is a 1300 acre farm that has 720 acres of Demeter Certified Biodynamic® pasture fenced in for our herd to graze. This means that our grass and forage, primarily alfalfa and orchard grass, is never exposed to petroleum-based or conventional fertilizers, pesticides, herbicides, fungicides, or any other “–cides”.
Instead, we bring life to the soil with compost made from our herd’s manure, straw, and hay. We apply the compost directly on our pasture. We also use biodynamic preparations, compost teas with herbs and minerals to increase the vitality of our soil and grasses.
Rotational Grazing
We use a “rotational grazing” system so our cattle always have plenty of fresh grass to eat. The idea is simple. Our herd grazes on one portion of our pasture while the remainder of our pastures rests and works on growing more fresh, healthy grass. The herd also does a very important job for us; the jerking and tearing of grass with each bite (and their saliva!) actually works to stimulate the roots and promote even more growth, in ways that a lawn mower just can’t do. Their manure is the best fertilizer we could ask for, and they spread it all over the pasture for us, trampling it into the soil with their hooves.
Since we began using this system hand-in-hand with biodynamic methods, we’ve seen our soil become richer, more diverse in beneficial bug species, and more balanced in healthy grasses. Our sustained effort to revitalize the soil and pasture is part of our commitment to biodynamic farming and to our cattle.
