Our leanest option - 95% lean, just 5% fat. Ground sirloin comes from the mid-back of the cow, same spot where you'd find tri-tip and top sirloin steaks. We grind it for folks who want all the protein and flavor of 100% grassfed beef without the extra fat.
Our cattle spend their entire lives on Kentucky bluegrass pastures right here in Crestwood. Grass from birth to finish, never grain. They're raised humanely and handled with care - it's the only way we know how to farm.
Ground sirloin's great for tacos, chili, spaghetti sauce, casseroles - anything where the beef gets browned and mixed with other stuff. Since it's so lean, it cooks fast and works best in recipes that have some moisture to them. Not the best choice for burgers (it'll dry out), but perfect when you want strong beefy flavor without the grease.
