Mediterranean Bowl Foxhollow Farm

We ❤️ 100% grassfed lamb and this bowl is the perfect summer meal! Crispy, fresh, and hearty - enjoy outside and in the sun! This Mediterranean Bowl with Ground Lamb and Hummus recipe was developed by Lindsey McClave.

Ingredients:

Ground Lamb

  • 1 lb Foxhollow ground lamb
  • ½ red onion, diced
  • 2 cloves garlic, minced
  • 1.5 tsp dried oregano
  • ½ tsp ground cumin
  • ¼ tsp red pepper flakes
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbs olive oil

Roasted Beet Hummus

  • 3 medium or 5 small beets, roasted, peeled & chopped
  • 1 15oz can of cannellini beans, drained & rinsed
  • zest of 1 lemon
  • ⅓ cup fresh lemon juice
  • pinch red pepper flakes
  • 1 clove garlic, chopped
  • 2 tbs tahini
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼-½ cup olive oil

Cucumber-Tomato Salad

  • 1 cucumber, chopped
  • 4 small or 2 large tomatoes, chopped
  • ½ cup crumbled feta
  • 1.5 tbs minced fresh mint
  • Juice from ½ a lemon
  • 2 tbs olive oil
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper

Herby Rice

  • 1 cup Basmati rice, cooked according to package directions
  • 6 tbs mixed minced fresh herbs, including mint, parsley & cilantro

Instructions:

Ground Lamb:

Heat a skillet over medium-low. Add olive oil &, once oil is warm, add the onion. Saute until onion is softened, 5-7 minutes, then add the garlic. Cook garlic until fragrant, about 1 minute, then add ground lamb along with the oregano, cumin, red pepper flakes, salt & pepper. Bring the heat up to medium & use a wooden spoon to break up the lamb and mix in the spices. Cook until lamb is browned throughout. Taste and adjust seasonings to your preference. Cover, remove from heat, & keep warm until ready to serve along with herby rice, beet hummus, & tomato cucumber salad.

Roasted Beet Hummus:

Place all ingredients except for olive oil in the bowl of a food processor or a blender. Blend until combined & then, with the blade running, pour in ¼ cup olive oil, mixing until smooth. Taste & add additional olive oil if necessary for desired consistency.

Cucumber Tomato Salad

In a large bowl, add all ingredients except for the mint and toss to combine. Set aside at room temperature for 30 minutes before tossing again, allowing the tomatoes to release some of their juices. Taste and adjust seasonings if preferred. Stir in fresh mint just before serving.

Herby Rice

Cook rice according to package directions. Toss fresh herbs with warm rice just before serving.
