Recipe | Ancestral Blend Zucchini Boats

Summer's garden brings us an array of fresh vegetables, and what better way to celebrate than with a delicious and healthy dish that showcases some of the season's finest?

Our Ancestral Blend Zucchini Boats are a perfect blend of hearty and nutritious, featuring tender zucchini filled with a savory mixture of 100% grassfed ground beef with liver and heart, aromatic herbs, and fresh summer vegetables.

Ingredients

- 4 large zucchinis

- 1 lb Foxhollow Farm Ancestral Blend Ground Beef

- 1 medium onion, diced

- 1 bell pepper, diced

- 3 cloves garlic, minced

- 2 cups Summer Veggie of choice (corn kernels, cherry tomatoes, carrots, summer squash, chopped green beans, fennel)

- 1 cup cooked quinoa

- ¾ cup Manchego cheese

- ¼ cup fresh parsley

- 2 tablespoons Umami seasoning

- lemon to taste

- salt and pepper to taste

- cooking tallow 

 

Instructions:

Preheat oven to 375°F (190°C). Cut zucchinis in half lengthwise and scoop out the center to create "boats." Place them on a baking sheet.

In a skillet over medium heat, add 1 teaspoon cooking tallow. Cook the diced onion and bell pepper until softened, about 5 minutes. Add garlic and cook for another minute.

Add the ground beef to the skillet. Cook until browned, breaking it up as it cooks. Season with salt and pepper.

Stir in Summer Veggies of your choosing, we prefer cherry tomatoes, corn kernels, carrots, or diced summer squash! Cook for 2-3 more minutes until the veggies are tender.

Add cooked quinoa, Manchego cheese, Umami seasoning, amd fresh parsley, and stir until combined. Add lemon to taste.

Spoon the beef and veggie mixture into the zucchini boats and bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender.
