Sloppy Joes Foxhollow Farm

Nothing says summer nostalgia quite like a sloppy joe! Whether you ate them in the mess hall at summer camp or over a paper plate at a picnic - these sandwiches will take you back to the good ole days. This sloppy joes recipe was created by Farmer & Foodie collaborator, Lindsey McClave.

Ingredients:

  • 1 lb Foxhollow ground beef
  • ½ large white onion, small dice
  • 1 bell pepper, small dice
  • 3 cloves garlic, minced
  • ¼ cup tomato paste
  • 2 very ripe tomatoes
  • 1 tbs paprika
  • ¼ tsp red pepper flakes
  • 1 tsp mustard powder
  • 1 heaping tbs brown sugar
  • 1 tbs dijon mustard
  • 1.5 tbs worcestershire sauce
  • ½ cup unsalted chicken stock
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbs olive oil
  • 2 tbs butter
  • buns for serving

Instructions

Serves 4

Bring a large pot of water to a boil. Using a knife, make a shallow x cut on the bottom of each tomato. Carefully lower the tomatoes into the boiling water & cook for 1 minute. Use a slotted spoon or mesh strainer to remove the tomatoes from the water. As soon as the tomatoes are cool enough to handle, peel off & discard the skin (it will have come away from the meat of the tomato at the x cut). Dice the tomatoes, reserving juices, & set aside.

Pour out the water, dry the pot, & return it to the stove. Warm over medium heat & add 1 tbs olive oil. Once the oil is warm, add the beef & saute until brown throughout. Transfer beef to a bowl, leaving the cooked out fat in the pot. Add the onion & bell pepper to the pot along with a pinch of salt. Saute over medium-low heat until softened, 5-7 minutes, before adding the garlic. Saute garlic for 30 seconds & then add the tomato paste. Stir the tomato paste into the vegetables & cook until it begins to stick to the bottom of the pot a bit, 2-3 minutes.

Add the fresh tomatoes to the pot along with the cooked beef, paprika, red pepper flakes, mustard powder, brown sugar, dijon mustard, worcestershire sauce, chicken stock, 1 tsp kosher salt & ¼ tsp black pepper. Stir until well combined & simmer softly over low heat, stirring occasionally, until the sloppy joes have thickened & reduced, about 20 minutes. Taste & adjust seasoning to your preference.

Slice buns in half & butter inside of top & bottom. Toast until browned. Ladle sloppy joe sauce over the bottom of the bun, add top, & serve.
