Sweet Potato Latkes
This Sweet Potato Latkes is a recipe you can't go wrong with. I first started making sweet potato latkes when I was on the Whole30 diet. They are healthy and lite, yet satisfying and filling. As you cook these latkes, the quintessential holiday aroma of cinnamon and nutmeg will fill your home with warmth and joy. I love making these for a crowd, and I encourage you to invite friends and family over to enjoy a holiday brunch, luncheon, or dinner. Latkes also make the perfect holiday gift for your foodie friends. I like to cook a couple batches of latkes, wrap them in a decorative dish towel and toss them in a gift basket paired with a jar of applesauce and a couple of our 100% Grassfed Beef filets. The perfect holiday gift basket! Serves 5

Ingredients

  • 1 lb sweet potatoes, coarsely grated
  • ⅓ cup almond flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon cayenne pepper
  • 2 eggs, beaten
  • Sunflower oil or any high heat oil
  • 2 Scallions , finely chopped (optional for serving)
  • Applesauce (optional for serving)

Preparation

Using a box grater, or a food processor with grater attachment, coarsely grate the sweet potato. Squeeze the grated sweet potato to release any liquid that might be in the potato. In a medium mixing bowl, combine the squeezed/grated sweet potatoes, almond flour, salt, cinnamon, nutmeg, and cayenne.Beat two whole eggs and then add them to the sweet potato mixture. Mix everything together. Next, heat 2 tablespoons of sunflower oil over medium high heat in a deep 12 inch skillet (I like cast iron). Make sure the oil gets hot, but not smoking. Using your hands, form small patties of the sweet potato mixture. Working in batches of 4-5, place the patties in the hot oil and flatten with your spatula. Reduce heat to medium and cook until golden, about 2 minutes per side. Transfer latkes with spatula to a paper towel to drain. *You can keep the latkes warm in a 200 degree oven while you cook the rest of the latkes. Garnish with chopped scallions and a dollop of applesauce and enjoy! Pair this with any of our 100% grassfed beef to make a delicious meal.
